Banana Oat Bars

Ingredients

Original recipe makes 3 dozen

 1 1/2 cups quick cooking oats
 1 cup white sugar
 4 teaspoons baking powder
 1 teaspoon ground cinnamon
 1/4 teaspoon baking soda
 1/3 cup raisins
 1 cup mashed bananas
 1/3 cup skim milk
 3 egg whites
 2 teaspoons vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt together dry ingredients. In a separate bowl mix together bananas, egg whites, milk and vanilla. Beat all together.
  3. Bake in a 9 x 13 inch pan which has been sprayed with non-stick spray for about 30 minutes. Cool and cut into bars. You may sprinkle with cinnamon and sugar, if desired.
